You can have Fizz issue a new eSim for a new phone directly now, no physical sim required. Just go https://zone.fizz.ca/dce/customer-ui-prod/account/plan -> Manage my plan -> Change my sim and follow the instructions.
However, it still requires Fizz to issue a new eSim, which may be subject to an identity verification process and subject to rate limiting. When I was with Freedom before, you could only do this once per billing cycle, which was extremely annoying when I once found out that a new phone I bought was defective and had to be returned a day after I had already transferred my eSim to said phone. Not sure what the limitation is with Fizz (if any) but, in general, I stick with my statement:
- If you switch between multiple sims on the same phone often, eSim is the way to go.
- If you move the same line & plan between different phones often, stick with a physical sim.
- If you use dual-sim on the same phone constantly, your choice of esim vs. physical maybe limited by what your phone can do and what type of sim is available from the "other" carrier. Some Android phones can't do dual eSim for example, only one eSim + one physical. So, the best choice depends on your individual use case there.
If you don't do any of these things, it doesn't really matter too much. The physical sim is easier to handle once active, on the other hand, an eSim offers instant activation without spending the time to go to a store or wait the extra few days for a physical sim to be shipped to you.

To use dual-sim functionality on current midlevel to highend phones. These typically support only one physical sim + esim. And some even move to esim only, like the new iPhone Air.

Correct. You can only have up to 2 sims active at the same time. All such phones support 1 physical + 1 esim, some (Apple, Pixel) also support 2 esims at the same time.

I used to use a regular SIM, but I got a new phone this summer and figured it was a good time to switch to eSIM. So far, I’m loving it—the only catch is you’ve got to be careful not to wipe it when resetting your phone.

I've seen online that there is a way to buy a sim card that convert your non esim phone to a esim phone compatible. Do you know if this new thing would work with the esim fizz activation thing ? Let's say I want to try to port with actual phone number linked to a physical sim card to an esim (a true esim or esim converter) can I keep the same phone number ? How does this switch between sim plan and esim plan goes ? Is there any fees ? Do I need to buy a new plan ?

Yes, you can convert your current Fizz number (physical SIM) to a Fizz eSIM, for free, without changing your plan, and keeping exactly the same number.
However: “SIM cards that add eSIM to a non-compatible phone” will not work with Fizz.0 -
I think, they are asking about ordering an eSim profile and then install it on an eSim-to-physical-sim converter sim card to used on phones without eSim functionality. Not sure, if that has been tested. I've done this with two brands of travel esims and one overseas local carrier and those all worked.
Haven't tried with Fizz, because, well, if I want Fizz on a physical sim, I can just buy a Fizz physical sim card. Much cheaper than them converter sims

Yes but if you are planning to travel and use ''other'' provider that are cheaper around the world it's worth it!
But the real question is more about if I switch to Esim/physical esim convertier, would it count as a ''new customer'' on fizz?

If you are an existing customer with Fizz and you want to switch your existing number from physical sim to eSim, then no, you would not be considered a new customer. That's merely a replacement (e)sim card.
If you are porting your number from another carrier to Fizz or you create a new plan and number with Fizz, even if you already have other Fizz plan(s), then that counts as a "new customer" that qualifies for the discovery discount.
