You can try to disable the band steering
With your prefered browser go to 192.168.0.1
login using the username cusadmin the password is your wifi password
Go on Wireless → General settings → 5.0GHz
Disable Band steering
ATF → 2.4G and disable the ATF option
ATF → 5G and disable the ATF option
Click on save the modification
The modem should reboot wait couple of minutes
From the app
Try to disable "Airtime fairness" and "Band Steering" this should do the trick:

Open the Wi-Fi Fizz app
Select My Wi-Fi
Select your Wi-Fi network
Select Advanced
Select Continue

Depending on the WoFi signal if it’s too weak, your iPhone might switch over LTE For a better connection while using your phone. This feature is called WiFi Assist and must disable within your Carrier settings. Go to Settings (Paramètres) then select Cellular (Cellulaire/Réseau mobile) et scroll down at the bottom to disable WiFi Assist.

I think Mike has a good first start of where you should looking.

A couple of things to add, when you attempt that solution, try connecting to the 2.4ghz broadcast, and not the 5ghz. the 5ghz signal is much faster but because the band is 'thicker' it has a hard time going through objects to reach your device. So what you may experience are drops, while it tries connecting to the 2.4ghz signal.
2.4ghz is fast enough for mobile phones and has much greater coverage.

WiFi cutting out can be a number of other things, one of which is also based on your household usage (number of devices connected simultaneously) or interference from other devices. Namely if you live in an apartment complex, with lots of other signals around you. Linus talks about this at 2:40. hope this helps some.
