I'm not exactly sure what you meant for 'only for new subscribers' - I am a current subscriber and was able to access it by the following:
- Logged on to Fizz.ca website
- In the 'Overview' page, select 'Mobile Plans'
- Confirm address associated with number
- Then the first option listed is:
'Order and activate an eSIM'
$0 | With QR Code
It then lets you choose what plan you want etc. So it does require setting up a new plan (which you could always follow with cancelling your original plan).
You may have meant it's not possible to transfer your current plan from physical SIM to eSIM.1 -

Being able to change to an eSIM is nice but I think it's better to keep it as a SIM since it's more convenient to use eSIMs from apps/local providers while travelling to avoid the costly travel add-ons

That's…. not great. I have a good plan that is no longer available and I have no reason or desire to change it. I"m not sure I like being forced to choose between never having eSIM or forfeiting a good plan. I'll wait and see if this changes in the future.

You're right its easyer this way. Some new phone have 2 esim slots and both can be use at the same time.

I have a Pixel device so I'm stuck with 1 physical SIM and 1 eSIM unless I'm missing something. I leave the eSIM slot for when I travel.

Depending on which Pixel you have, you can install multiple e-sims (not limited to only one for the install), in addition to the physical sim.
You may be only to have two sims (physical or electronic) active at any one time tho. Recently used data only eSIM as well as my Fizz physical sim and just went to settings to pick which sim I wanted to handle which task (calls, data)

I activated two different eSIM since this launched - one data-only on my iPad Air M1, on voice/text only (no data) on my Pixel 8 Pro as a secondary phone number, it worked perfectly well and without any issues!3
