Switching plans
Question about switching between Canada and Canada/USA plans:
So if currently I'm on a 4gb Canada plan (which doesn't exist anymore), and I switch just the coverage to USA, it'll add $4 to my monthly rate. I'm ok with that. Question - if the following month I want to switch back to just Canada, will it go back to my original 4gb plan (minus the $4) or will I have to pick the current options of 1gb or 6gb data options? Will I be able to just switch the Coverage again and not touch the Data — meaning I keep my original 4gb at the same price I had before adding the UsA coverage?

you will have to select any plan that is available at the time of the switch. so if your plan no longer exists or the price has changed, then you won't be able to go back to it

If the plan will be available when you want to switch back yes otherwise no. You can only pick the offer available in the moment of the plan modification.
Moreover, if you need the voice in USA check if your phone is a VoLTE certified by Fizz https://fizz.ca/en/faq/compatible-devices#3
If you need only data check the travel addon

But when I do my initial change, I can change just the coverage without changing my data right? That means when I go back, I can't just ONLY change the coverage again?

If you go to your account and select change my plan it should put you at a tier above or below that GB value, i.e 3/6GB and you won't be able to go back to 4GB.
From the way you are asking the question I am assuming you are planning a trip to the USA. I would recommend getting a local/travel eSIM in this case as they can be cheaper than Fizz's travel add-ons (currently discounted until August 30th) but your mileage may vary. Shop around and see if you can get a good deal.

you modify the entire plan, when you go pack you can chose only the available options with the price at the moment of the modification

No. Don't think you can do that. When you change plan it'll reflect the current price for fizz not your plan price.
