Rolled over data lasts for the two following payment cycles, even if you change your plan. It’s always used before your monthly data. So if you have rolled over data, you’ll use it up first and then move onto the data in your regular plan.

No you don't lose them
If you change your plan, your rolled-over data will match your new coverage. For example, if you switch from a Canada-US to a Canada plan, your rollover data will also switch to a Canada plan.

Can you try to make this test
- Disable the wifi
- make a call
- check if the signal stay in LTE during the call
If you phone will stay in LTE during the call, this means that you have a VoLTE Card and you have a certified phone, therefore, the phone can be used in the USA for calls
If you don't have VoLTE you will be able only to use data in the USA
