I noticed that, when picking a plan, I have the option of rejecting visual voicemails. $2 per month will be saved. But will it disable VM as a whole, or is it just the visual part that I will not have access to?

Unfortunately, it will disable voicemail as a whole, not just the visual part.

It's the voicemail box entirely.
Visual voicemail is now a part of the regular voicemail experience.

The Visual Voicemail option is the only why to get access to voicemail on Fizz.
So yes, by removing visual voicemail, you also remove voicemail.
