iPhone displays Videotron as network (not Fizz)?

Yes, fizz is a startup within Videotron, all normal.

From your picture, your mobile signal was pretty weak, so it probably switched to Videotron's. Also note that Videotron is a sibling company to Fizz, both owned by Quebecor, so they use the same network.

The procedure for iPhone is pretty straightforward and I did it already:
1. Install the latest software update.
- Connect to a Wi-Fi network
- Download the latest iOS software update
2. Update the carrier settings.
- Once the software update is done, your iPhone will offer a carrier settings update. Make sure you accept it.

It's normal same thing for me normally it's fizz but some time I see videotron

Fizz and Videotron are one (Fizz being a subsidiary of Videotron). This is simply a display error. Technically you are still using the 'home' network, so you will be fine. Nothing to worry about.

Fizz told me to make sure iPhone software is updated as it may prompt to update carrier settings.

On Android, mine literally shows "Fizz" :
- top left, when it is locked
- in Mobile Networks ► the Network Operators.
- in Mobile Networks ► Access Points Names
- in About Phone ► Status Information ► Sim Card Status
So not sure about Videotron's value in the display (not disputing the fact that Fizz is a subsidiary of Quebecor and borrowing Videotron's infrastructure).
@redhead Maybe there is an equivalent configuration value you can double check somewhere else in your iPhone settings.

Do you set the Fizz APN : https://fizz.ca/en/faq/what-are-fizz-network-settings-apn
Log into your Fizz account and follow this path:
My plans → Manage plan → Advanced parameters → Fizz network parameters → Resend me the notifications
On my end its Fizz on the left corner but im an android user so i dont know for IOS but its seem weird.

There are no APN settings to set in iOS; only on Android.

Hummmm i dont know but the point 4 clearly said : Installing network settings (iPhone). So unless some iPhone use Android (spoiler its not the case) its seem you have to do it too the method its juste different.
