Why does my mobile data usage increase even when on a stable wi-fi connection?

I just switch two phones over from Videotron. They are both on a stable Wi-Fi connection most of the day, and in fact one phone has not been off Wi-Fi in a few days (it has not left the house). But I'm seeing more mobile data usage than I did with Videotron, despite no change in behaviour. I know about iPhone Wi-FI assist, and I don't believe that is a factor. When I review the usage on Videotron for the same devices, on days when I know one of the devices is off Wi-Fi, they still used less data than either phone has while on Wi-Fi in the two days since switching to FIzz.
Phone A:
Fizz:
Day 1: 54MB - this usage occured in the 7 hours from when Fizz was activated; I visited one website, then turned on WiFi
Day 2: 53MB - typical usage - 15 minutes in the car with Google maps, WiFi the rest of the time
Videotron:
Day -1: 110MB - data was used off wi-fi
Day -2: 14.76MB - typical usage - 15 minutes in the car with Google maps, WiFi the rest of the time, still less than Fizz
Day -3: 0.26MB - the phone did not leave the house
Day -4: 47.93 MB - typical usage - 15 minutes in the car with Google maps, WiFi the rest of the time, still less than Fizz
Phone B:
Fizz:
Day 1: 23MB - in the 6 hours since Fizz was activated
Day 2: 24MB (so far) - the phone has not left the house, let alone the table it is sitting on, WiFi is always on
Videotron:
Day -1: 0.64MB
Day -2: 0.39MB
Day -3: 82MB - the last time the phone left the house
Day -4: 0.32MB

That is strange. My Mobile Data is always turned on and I don't see any data usage when I'm connected to my home Wi-Fi.10

I should add; I checked my phone. WiFi Assist has used 1.9MB in the last 11 hours, The phone has been off WiFi for 10 minutes in the last 11 hours.
I am resetting my phone stats to see the activity over the next 24 hours.9 -
Warren sometimes it’s some app which are using some mo in the background. Put your phone on data off just to be sure or go in your settings to close the apps.10

My question, then is, why is it that on Monday my data usage with Videotron was X, and consistent over time, and the first few days on Fizz the data usage is higher. The phone is the same, the app usage is no different between the last day of Videotron and the first few hours of Fizz. But with Videotron, it sees days with less than 1MB of usage and within hours of Fizz, there are 50MB of usage, when the phone was on WiFi?
Phone is the same.
Apps are the same.
Usage is the same.
Service provider is different.
With Videotron I was data sensitive, because I had limited data. So I have the history that shows a marked difference. Over time, we will see what happens. But my expectation is that on a regular day, I should use no less than 5MB of data, if not 1MB.12 -
I don’t know if it will help you but try to reach Fizz for this question the difference between videotron and Fizz ... Chat with Fizz.

You have already taken steps in the right direction by posting here and then resetting your phone stats to check your activity for the next 24 hours.
It could be increased data usage due to a recent iOS update, a newly installed app or just an updated app. Please let us know your findings.10 -
Maybe it's not related, but I know I don't receive MMS when my data is off. So even if you are on WiFi, maybe MMS still uses data.8

Negative. I don't use SMS or MMS. In fact, the only time I have used MMS was when I activated my sim card and sent a text and an image to someone who does not have an iPhone. Definitely not 50MB worth.7

Make sure your wifi is set properly, sometimes it wont work and automatically use the LTE even if you do get wifi signal.5

Your phone seem to see a difference, he think there is no wifi or that he should use the cell data

Alright, so my unscientific test went as follows:
At 20:51 yesterday I reset the statistics on my phone.
As of 15:34 today, my phone says I used 69.0 MB of data.
Fizz says I used 72 MB. Not a terrible difference, so I can accept this.
It is clear to me that the Fizz stats are rounded up; why it added 3MB extra, I don't know and I don't like.
When I checked my stats this morning, the overnight cellular usage was 250KB, but Fizz was showing 1MB of usage, which is alarming.3 -

I followed the data usage since September 25 and it seems to line up with what my phone says. So all is well.
