It's a tricky one, not sure to be honest.
The regular Galaxy S21, S21+, and S21 Ultra do support eSIM, but the "FE" models are a different story.

As esim compatibility is dependent on hardware, Android version won't matter.

I won't buy a phone that doesn't. :-)To be able to use an eSIM, you will need to change your phone model when you buy a new phone.
