If you are talking about data gifts, then it's in at least 500 MB (0.5GB) increments, and you can't change it. There is no maximum amount. You can gift data at any time, but it must come from your current (monthly) plan's data allowance, not from rolled-over data, Perks, data gifts, etc.

I thought it's usually set to the last amount gifted, but I could be wrong.

As other have said, it isn't possible to change the default value.
You can either change the value and do one gift or keep it to default and make several gifts until you reach the amount of data you want to give.
