Yes the SIM must be ordered, only when you receive it you can create your plan

Yes, it's possible and I've done it. It doesn't actually matter what plan you choose when buying the sim card. That's more of a preview of current prices.
When the sim card arrives, you will have to activate it. At that time you will configure your final plan.
Keep in mind that the plan prices can vary, between the time you order the sim card, and the time of activation. Your plan price will be whatever the price is on the day of activation, not the day of sim card purchase.
Remember to use a referral code in order to receive 25$ at your second payment. You can use mine: it's in my username after the underscore.
