Switching over from Oxio > Fizz
If I switch over from Oxio or Fizz does it automatically cancel oxio subscription when I activate my services with Fizz, as I assume they are using the same "cable" lines

No Fizz will not cancel the previous provider subscription for the internet
Yes Fizz is using the Videotron coaxial cable
From the Fizz's guide
Once your Home Internet plan is activated, don’t forget to contact your previous provider to cancel your Internet subscription with them, and avoid paying double.
In addition to your Fizz subscription, you can, of course, choose to have other subscriptions at the same service address, such as an Internet connection from another provider or cable TV service. For those situations, you’ll need a splitter for your cable connection. You can also have a second cable outlet installed.

Does subscription start only when I receive the hardware, and active on the exact date?
Plus I am assuming once I plug in the Fizz Modem in the exact same physical line as my Oxio modem without need for technician to do anything on site.

The subscription start from the delivery date if the tech will deliver the modem or from the activation if you receive the modem by mail (or the 3rd day)
In your situation you should be the activation, since you already have an active coaxial cable
However, you money will be taken at the subscription
You received your Fizz Wi-Fi modem by mail?
Its activation date marks the beginning of your payment cycle. Don’t forget, Fizz will activate it remotely three (3) days after its delivery date, but you can activate it yourself in your account if you’re ready before then.
Your modem was delivered by a technician?
If you had an installation appointment with a technician, your modem will be activated then, and the date of your appointment therefore marks the beginning of your payment cycle.

For the second part of your question, no you don't need the tech, since you only need to unscrew the cable from the old modem and connect to the Fizz's modem

You should have already the line so no need of the technician.
Regarding the activation.. Oxio will not be cancelled automatically, but still, it's better to keep the old service active until you are sure that Fizz is up and running.

I am switching over due to the perks issued by Fizz. I have bee a long time subscriber for the cell phone plan so I have a bit of confidence in the company.
Having said that I know the main lines/infrastructure is owned by Videotron so its a no brainer to switch over.

I'm currently with Oxio's 60 Mbps and it has been reliable... I will consider Fizz for increasing the speed since oxio is more expensive at higher speeds

Myself, I don't have the eero 6 because I joined some time ago... I have a Smart RG router which is not provided anymore. The eero6 is provided free of charge.. if you want more than one you have to rent the extra ones
