You have to wait until the SIM card is delivered as you need the simcard for the activation process. During the activation process you can choose your new number or transfer your old. Also, don't forget to use a referral code when you sign up. Right now you can get 50$ bill credit. You have to do that before you subscribe to the plan.

if you had a number with another company and would like to have kept the same one, it was during the activation process of the sim card according to this fizz article: https://fizz.ca/en/faq/activation-how-do-i-transfer-my-current-phone-number-to-fizz
if you would like to change it now, you may need to contact fizz support to see if that is still possible now. they may need to send you another one however.
if not those options, I don't think you can pick the numbers in your phone number, they are probably randomly generated if you don't want to keep an existing one.
