Travelling for more than 3 months outside Québec?
I am travelling to Alberta for an internship between August 15th and December 15th 2020. I read that after 3 months Fizz may (or may not?) cut my phone services (including data), and that I would have to buy add ons for data? I also read that the alternative Fizz suggests is to switch to another carrier for the time being, which I think is ridiculous (if I move to another carrier, why would I come back to Fizz?). Is there any other decent alternative to that? I would really only need data, would I be able to borrow data from someone off of the Facebook group or would that be disabled too? If I stop paying for a while, what will happen to my account?

This is nor ridiculous since the provider do not like when you use their service.
Therefore you have couple of options
- buy the addons after 3 billing cycles
- switch to a provider present in Alberta11 -

Only, buy add-ons to respect to not exceed more than 50% of your usage (on the partner's zone) more than 3 consecutive months. And use a VOIP application for your calls.8 -
Usualy, add on is not that expensive.6

It looks like you should be fine for 3 months, then they will likely block your service. You could switch to a local provider and reduce your Fizz account to the bare minimum for the last month you are away. Your phone number would still be linked to your fizz account, so you would need to use messenger or other communication apps.
