Do I have to call Bell and cancel my service or is this done automatically? Will my Apple Watch service also be canceled? Will you support Apple watches or iPads soon?

If you transfer your phone from Bell to Fizz then yes Bell phone services will be cancelled automatically.
I can not answer for Apple watch service.

Bell cell phone service will be cancelled automatically. If you have other bell data only sim for iPad, you need handle it separately.4
