Interesting question Franco, here's my proposal.
It really should not matter. An Apple Watch is LTE and so is Fizz. The Fizz network does not care what device or device type connects to it provided it's using the same frequency bands as the network offers.
Is your Apple Watch not working on Fizz?

The Apple Watch only supports virtual sims. Therefore, my question is geared towards this.
I know Videotron does not support the Apple Watch.

eSIM powers Apple Watch.
I guess no is your answer then Franco, not for now.

Considering that Fizz's parent company Videotron does not yet support E-SIM I believe it this will not happen anytime soon.
