Money in wallet when roaming
If I have money in wallet when roaming, is there any way to prevent it being used on pay-per-use data/minutes? I don't want to turn off my Fizz line so that I can continue to receive texts, but I also don't want to inadvertently use mobile data/minutes.

Disabling data roaming in phone settings should prevent it from using data outside of coverage zone.
Actually, disabling data roaming will not prevent your phone from using pay-for-use data if your coverage zone is province-only and you are travelling to other provinces in Canada. You're still in Canada and out-of-province coverage is not considered roaming from a technical point of view, but it is for billing purposes.
If you want to make sure your phone is not using pay-per-use data when travelling out of your plan's coverage area in Canada, you need to disable mobile data altogether before leaving your coverage area. You'll find this in the Cellular Data page of your phone's setting. If you have dual sims, this is typically a global setting, not a per sim card setting.
Texts are easy enough to avoid, just don't send any. Receiving texts is still free, even if out of coverage area.
For calls, you don't want to take any incoming calls or make any calls (obviously). However, you also want to disable call forwarding to your voicemail as this is typically billed as an incoming and outgoing call ("the forward") simultaneously.
"Dial" #002# <SEND> to disable voicemail call forwarding.

Disabling data roaming in phone settings should prevent it from using data outside of coverage zone. Keep in mind that it might prevent you from connecting to partner networks within zone as well.

I disable data roaming when traveling outside Canada, but I still get charged for data roaming every 7-10 days.

When I received an email from Fizz (Your phone is roaming: happy travels.), I knew that I got charged again, although I didn't use Fizz data at all....

I would like to inform you that our dedicated team informed us that the money from the wallet were taken correctly since the services were used while roaming.
It is possible that the roaming was active during your trip and that is why you were charged,
I give up, and let Fizz charge me $0.03 for the data roaming ( used: 0 ) when they want...

I was debating whether to mention it, but I didn't know whether Fizz was affected. Unfortunately, even with mobile data turned off, if on an LTE or 5G network, a phone still has to connect to the data network to register for some services, most notably VoLTE server registration. Another wonderful fallout from the "superb" industry decision to run "everything" over data in LTE/5G networks.
Some carriers are apparently incapable or unwilling to zero-rate such necessary data traffic that is not user-generated. Fizz is certainly not the only carrier affected by this. It is a global well-known issue.

If you get charged only 7-10 days, feel lucky. Last time, I've experienced this last year with a European carrier roaming here in Canada, the charge came on a daily basis.
