I am located in an extended coverage area. Does anyone know which telcom provides the service in Eastern Ontario? I have stronger signals with some over others. Thanks!

You should check on the map here https://fizz.ca/en/coverage what subscription area you are in. If you are just in "coverage area" but not in a subscription area, you'd probably not be able to register a Fizz plan at your address.

In general, if you are in main subscription area, the majority of your usage will have to be on the Freedom or Vidéotron networks. You should have all of the "big 3" networks available to you as well for now but you'd have to limit their use.

Again in general, if in an extended subscription area, you'd have no coverage of the Freedom or Vidéotron networks for now and thus no usage limitation on the "big 3", however, that would change eventually as Vidéotron has committed to extend their own network coverage into those areas over the next few years.

To assess the situation at your exact location, you should run a network scan on your phone and see if it finds Freedom and/or Vidéotron networks. That'll give you an idea of what to expect.

Just ask your neighbor which provider they use.

You should test first. You can cancel within the first 15 days and you'll be refunded.
Notes : Fizz will not refund your sim card cost (15$) , only the subscription will be refunded.

Why would you say that? That's not how I read the https://fizz.ca/en/community-user-guidelines:
