Dual sim on an iPhone 12 Mini
I'll be retiring in two months and am hoping I can port over my work number that I've had for 10+ years (yet to see if IT will let me). In the mean time, I want to get a mobile plan with Fizz (wife is already on) with a new phone number to get ready. When the time comes to retire, and if I can port over the work phone number, can I do that on the iPhone 12 Mini I've bought, with a Fizz mobile plan, using the dual Sim? Also, will Fizz charge me extra to have two numbers on one phone? I don't mind restricting one to just data, or having one do less than the other.
this scenario would help in case I forget to update my personal contact information, that is, I could still be reached on the old/work phone number by doctor's office etc (there's bound to be someone I'll forget to update with).

I'm not sure, I understand exactly what you are trying to do. Fizz will only allow porting in an existing phone number when you are activating a new Fizz plan. You cannot port a phone number onto an existing Fizz plan.
So, you may want to wait until you receive the green light from your IT whether you can port out your work number before activating your Fizz plan.As to your second question, Fizz will charge you extra if you activate two Fizz plans. Doesn't matter if they are used on the same phone or on different phones. On the other hand, if you use two numbers on the same phone and only one of them is from Fizz, Fizz will only charge you once. But the other provider from which you get the second number will then also charge you of course.

Porting Your Work Number: Fizz allows you to port an existing number, but only when activating a new plan.
Charges for Two Numbers: If you activate two Fizz plans (one for each number), Fizz will charge you for both plans, even if they're used on the same phone.

Only mobile phone numbers can be transferred to Fizz. If it's a landline number, it can't be transferred to Fizz.

Landline, wireline or VOIP lines are not transferable directly to Fizz. You will have to go through another mobile provider to transfer it to Fizz.
Most providers offer a trial period.
