You should activate a call forward when you are in the coverafe area, I am using an app such Fongo / textnow, which gave you a canadian number and forward your calls to this number

As mentioned before, directly receiving calls on your Fizz number outside of Canada and the US is currently not supported.
Please also note that forwarding of your Fizz calls is supported only to Canadian numbers. If you are travelling with other people, you can check if one of them has a Canadian cell phone number with favourable roaming conditions in the destination countries and ask if they will allow you to receive your calls on their phone. You could then forward your calls to their number. You yourself do not require any data access in the destination countries for this to work.
The second option is to use one of the services mentioned above. They'll give you a new Canadian number that you can forward your calls to while travelling. You need to install and run their respective app on your phone while travelling. Any VoIP service will do really, but the ones mentioned above are certainly among the easiest to set up. However, your phone will require data access in the destination countries for this second option to work.
For data access, you can use WiFi networks in the destination countries, however, that would make you reachable for incoming calls only while your phone is connected to WiFi. If any of your travelling companions have a data plan in the destination countries they may share that with you using their phone's WiFi hotspot.
You can also get your own data plan for the destination countries, Fizz has some on offer, however, you buy them on a per-country basis and thus may not be the best option for you if you are travelling multiple countries as you had implied above. If your phone supports dual-sim and/or esim profiles, there are a number of travel data sim products available on the Internet, some of which cover entire continents such as South America on a single profile.
