How can I transfer my old number from a different provider after choosing already a new fizz number?

Sorry you can transfer your number from another provider only during the activation process.
If you wish to transfer your old number, you'll have to activate a new plan.

Once you have started a Fizz mobile plan, you are allowed to change your number only by selecting another new number.6 -
Fizz does allow you to choose the last four digits of your new number, for a small fee. Alternatively you could do as Fizzy recommended, contact Fizz customer service to ask if they can make an exception or cancel your service with the other carrier and see if you can reserve your old number somehow. Cancelled phone numbers usually are unavailable for a period of time.5

You should unsubscribe from your current plan and reactivate your sim. You'll be prompted to transfer your number during activation.5

Only, If the account of your old provider is still active...
You should unsubscribe from your actual mobile plan and reactivate your Fizz sim card and doing the transfert of your telephone number with your previous provider2 -
DO NOT UNSUBSCRIBE OR CANCEL FROM CURRENT PROVIDER. You might lose the ability to port (keep) your actual mobile number.2
