I need at least 5 GB for travelling abroad
Is there a limit to how many GB I can add? Or is it just a one time option of 1 GB and that’s it?

No you can add multiple times
However do not add too many since they are not refundable if you do not use them10 -

I'me pretty sure it will work if you add 5 GB during your travel. Not sure how it will react if you buy 5x 1 GB the same day (for exemple : you want right now 5 GB for your travel). My suggestion would be to buy more data when you need it.2
