Do you think that fizz would cancel mobile service in this situation? (Joining fizz and immediately heading over to Florida for three months?)

If the snowbird registers for plan with USA coverage and proceeds directly to Florida to use the plan, then service will be restricted, limited or suspended before the 3 months are up.

If the snowbird registers for Quebec or Canada plan, then buys the USA travel add-on for use in USA, this should be fine and meets the terms of service requirements for mobile plans.

Congratulations on retirement!
If you have Fizz internet then as long as you keep paying, everything will be as is when you get back. For Fizz mobile, things are a bit tricky, you'll need to be using the travel add-on and even then you might not be getting all the services.7 -
Fizz would suspend your service in the 4th month I think...7
