Can I activate sign up today, but have service and billing start at a later date?

I still have a contract with my old provider that expires in mid-December. I would like to get Fizz all set up now, though, but only activate the plan when I'm ready to switch over. Is that possible? Does your plan activate from the moment you order, or the moment you activate the SIM card?
I would also like to know how long it takes for a SIM card to arrive?

Your plan is only active when you activate the SIM card, so you can set up an account and order a SIM now and all you'll pay for until you activate is the SIM.
It took a couple of days for my SIM to arrive, but that may vary by location.12 -
I'm in Ottawa and it arrived the next day.11

Thank you Allison!
Do you (or does anyone) know if the plan I choose now would stay locked in if I didn't activate before prices go up?
Actually, does anyone know how long the launch period pricing will be valid?11 -
Launch price is valid until Dec. 19.12

Unless they decide to extend it like they did for beta prices11

This is a prepaid plan instead of a postpaid which means you are paying for service ahead of usage. Once you activate your SIM with a plan, it is in service. So it is the moment you activate the SIM card with the plan. So you can wait until mid-December (before the 19th if you want the introductory prices).
It takes a day or two for the SIM card. You can pay ($5) for a rush order and they will courier it to you the same day.12 -
It took me 1 day in Ottawa for my SIM to arrive.
Kent T. mentioned rush service - as far as I can tell it is only available in Montreal.10 -
Get sim now. Activate it when you are ready. It can be any time before introduction price end.4
