The SIM will be sent in a regular envelope trough Planet Courrier. You can track it online, takes about two days.

If you own the account and are billed for the plan, the phone number's under your name. Your wife would have to open a new account in order to have a plan run under her name. I don't think it's possible to switch plans between accounts. You'd have to contact Customer Service to verify that.
